These cookies are so soft and delicious!
What you need: -1 stick and 1/2 of butter softened -3/4 cup of sugar -1 egg -2 teaspoons of vanilla extract -2 1/2 cups of flour -1/2 tsp of baking powder -Halloween cookie cutters Royal Icing -3 cups of Confectioners Sugar -1/4 tsp of cream of tartar -2 egg whites Directions for the cookies: In a large bowl mix the softened butter, egg, sugar and vanilla until nice and smooth. Mix the flour and baking powder in a separate medium bowl and then add to the butter mixture ( add a little bit of the flour at a time). Once the dough is mixed well divide the dough in two equal parts. Roll out on parchment paper and refrigerate for at least an hour or up to 1 day(You MUST do this step). Preheat the oven to 350 degrees. Spray a cookie sheet with non-stick spray. Remove the dough, roll out(I placed the dough in between parchment paper and then rolled) and cut out your Halloween cookie cutter shapes and place on the baking sheet. Bake for 8-10 minutes. 8 minutes seemed to be perfect! Royal icing is great because it hardens. Beat the egg whites and slowly mix in the confectioners sugar and cream of tartar. Once cookies are cool decorate with icing and sprinkles. Enjoy!
