Nothing says summer quite like enjoying some watermelon! 🍉 Make an easy watermelon milkshake to quench your thirst this summer. 

Ingredients:
chocolate frosting
about a cup or so of frozen cubed watermelon
1 cup of coconut milk
1 tbs of sugar
red food coloring for color(optional)
Cool Whip colored with green food coloring (optional)

Directions:
Pipe some chocolate frosting on the inside of a glass to resemble watermelon seeds. Then place in freezer for an hour to set. 
Combine watermelon, coconut milk and sugar in a blender. Then pour into glass on top with green Cool Whip.

Banana Split Cupcakes

Banana Split Cupcake
Who doesn't love a delicious Banana Split Sundae in the summer? 🍨 July is National Ice Cream Month and I decided to make some tasty Banana Split inspired cupcakes! Yum!

To make the banana cupcakes you will need: 

Ingredients:
-1 1/2 cups of flour
-3/4 cup of sugar
-1 tsp of baking powder
-1/2 tsp of baking soda
-1/2 cup of melted butter
-4 mashed bananas
-2 eggs
-1/2 ts of vanilla extract

Topping:
-pink frosting
-white frosting
-Chocolate Ganache(or chocolate frosting)
-rainbow sprinkles
-Maraschino cherries

Directions:
Combine all of the dry ingredients first in a bowl for your banana cupcakes and mix well. Then add your wet ingredients and combine. Place into cupcake liners and bake at 350 degrees for 25 minutes. 

Once the cupcakes are cool the fun part is decorating! I placed vanilla and pink frosting into individual piping bags(cut the tips) and then placed both into a larger piping bag to create a swirl of the two colors to mimic vanilla and strawberry ice cream. You can also use sandwich bags. 

Top with either a Chocolate Ganache or just simply melt chocolate frosting slightly to be your fudge of the banana split cupcake. Then sprinkle with some rainbow sprinkles and lastly top with a cherry!

Unicorn Poop Pops

Unicorn Poop Pops
With the rising popularity of Unicorns and Poop emojis, I figured it was fitting to combine the two to make a delicious summer treat! This is an easy and refreshing Popsicle recipe using just vanilla Greek yogurt. 

I used my favorite YouTuber's bakeware line for the mold. You can get the Poop Emoji Mold HERE. 
You will need 4 cups of vanilla Greek yogurt and some  food coloring. I did white, pink, purple and yellow. 
Place the different colored yogurt into sandwich bags and pipe all the different colors into each mold.

Cover the mold with foil and slice small slits into each mold with a knife then insert a Popsicle stick. Freeze overnight or for at least 5 hours.

Cupcake Hamburgers and Twinkie Hot Dogs

Cupcake Hamburgers and Twinkie Hot Dogs
Memorial Day weekend is coming up which means plenty of hot dogs and hamburgers to go around. Since May is also National Hamburger Month I thought it was only right to make some sweet versions of our BBQ favorites! 🍔🌭

To make the hamburger cupcakes you will need: 
-Box of yellow cake mix
-Box of chocolate cake mix
-White frosting
-Red, yellow and green food coloring
-Sesame seeds

Directions:
Follow the directions  on the back of the cake mix box.  Make both yellow and chocolate cupcakes. Once cool, cut the yellow cupcakes in half as these will be the hamburger buns. With the chocolate cupcakes cut off the top and this will be the hamburger patty. 

Divide the frosting into 3 separate bowls. With the food coloring, make 1 bowl yellow (cheese), 1 bowl green (lettuce) and the last bowl red(Ketchup). Then take each frosting color and put into a sandwich bag or you can use  piping bag. For the yellow and green make a medium size slit at the end of the sandwich bag and for the red make a small slit. 

Place the chocolate cupcake that you cut  as the Hamburger Patty on top of the bottom half of the yellow cupcake. First you will need to do the cheese. Pipe the yellow frosting into a square shape onto the "hamburger patty". Next with the green frosting do the lettuce by  piping a star like shape. Lastly with the red frosting pipe a zig zag pattern as the ketchup. 

Top the hamburger patty with the top of the yellow cupcake. In a small cup combine some warm water with a little bit of sugar. Brush on the top of the yellow cupcake(hamburger bun) the sugar mixture and sprinkle the sesame seeds.  This final detail really makes it look like a hamburger. 


For the Twinkie Hot Dogs you will need:


-Twinkies 
-Red and Yellow frosting 

To make the Hot Dog cheesecake filling:
-8 oz of softened cream cheese
-1 container of thawed Cool Whip
-1/2 tsp of vanilla extract
-1/2 cup of powdered sugar
-Red and orange food coloring

Cut a slit down the middle of the Twinkie half way and gently spread the Twinkie. Combine all of your cheesecake mixture and using the red and orange food coloring create your desired hot dog color. Then place the mixture into a pipette bag (or sandwich bag) and cut the tip. Pipe the mixture down the center of the Twinkie to make your hot dog. Lastly pipe zig zags of your red and yellow frosting to create the mustard and the ketchup.

Campfire Cupcakes
June is National Camping Month! I really love to go camping with my family. It is always a good time filled with laughs, eating junk food and of course roasting marshmallows over an open fire. Here is how to make campfire cupcakes! 

You will need:
-Chocolate cupcakes
-Green frosting
-yellow and orange starburst candy
-thin pretzel sticks
-toothpick
-mini marshmallows 

Directions:

Frost the cupcake with the green frosting to form the "grass." 
Then take your yellow and orange starburst and roll it together (you can microwave for like 3 seconds to make it more pliable). This will be the "fire" and just simply tear pieces of it and create the fire in the center. 
Next create a Teepee with 3 pretzel sticks around the fire. 
​Lastly, put two mini marshmallows on a toothpick and with a lighter you can roasted them slightly and then add it to the cupcake as a final touch.

Ultimate S'mores Milkshake

Celebrate the end of summer with this super chocolaty Ultimate S'mores Milkshake! 

Ingredients: 
-6 scoops of chocolate milk
-1/2 cup of milk
-10 large toasted marshmallows

Garnish(optional):
-chocolate frosting
-crushed graham crackers
-chcolate syrup
-whipped cream

Directions:
To roast the marshmallows, line a baking sheet with parchment paper and place your marshmallows on top. Broil for two minutes or so. 
In a blender combine the chocolate ice cream, milk and roasted marshmallows. 
Line the inside of your glass with chocolate syrup(optional). You can also garnish the rim with chocolate frosting and crushed graham crackers. 
Pour the ice cream into your glass and top with whipped cream and if you like a few pieces of chocolate.

I love to enjoy a juicy slice of watermelon on a hot summer day. With National Watermelon Day coming up on August 3rd,I think it's only appropriate to celebrate with this refreshing beverage. Strawberry Watermelon Slushie! 

Ingredients:
-2 cups of ice cubes
-2 cups of frozen seedless cubed watermelon
-2 cups of strawberries sliced
-a squeeze of lemon juice
-1/3 cup of sugar

Blend ingredients in the blender and enjoy!

BBQ Grill Cupcakes

Looking for a treat for Father's Day or perhaps to bring to your next summer BBQ? These BBQ Grill Cupcakes are fun and simple to make. 

You will need:
-Cupcakes
-Chocolate frosting
-white frosting
-black  gel food coloring
-toothpick
-gummy worms
-hot tamales candy
-black food safe marker

Directions: 
I used chocolate cupcakes but you can use whatever flavor you like. Then i frosted with chocolate frosting. 
Next with the white frosting add a few drops of black gel food coloring to create gray frosting. This will be the grill. Put some in a sandwich bag and cut the tip. Pipe the frosting around the edge of the cupcake to create a circle. The pipe diagonal lines in the center. 
To create the hot dogs use two hot tamales candies and draw three lines on each(to be the grill marks) with a food safe black marker. 
Then to create a kabob, skewer some cut up pieces of gummy worms on a toothpick.

Ice Cream Cone Cake Pops

As we are nearing the end of summer I wanted to celebrate what I love most about the summer, ICE CREAM! So I made these really simple and tasty Ice Cream Cone Cake Pops! 

Ingredients:
-ice cream cones
-Cake mix 
-Frosting
-Pink melting chocolate
-1/2 cup or so of semi sweet chocolate chips 
-Rainbow Sprinkles


Directions:
1. Bake the cake mix according to directions. I chose to make chocolate. Once cool crumble the cake in a bowl. 
2. Mix about half of the frosting into the bowl of the crumbled cake.I used chocolate frosting.  Mix well and form into about a tablespoon size balls. Place on a baking sheet and wrap with plastic  wrap to chill in the fridge for at least an hour. 
3. If you can find mini ice cream cones it would be perfect but if not then just simply use regular ice cream cones and slice off the top (rim) of the cone with a knife. Then discard that piece. Then take the rest of your frosting and apply to the inside of the ice cream cones. 
4. Melt the melting chocolate. I used pink but you can use other colors. Remove the cake balls from fridge. Dip the cake ball in the melted chocolate to secure it to the cone. Let dry a few minutes. 
5. Then dip the cake pop into the melting chocolate(be sure to cover the entire cake pop). Allow to cool and harden for a few minutes. 
6. Melt the chocolate chips either in the microwave or using the double boiler method. HOW
7. With a spoon top the cake pops with the melted chocolate. Lastly sprinkle with some rainbow sprinkles on the chocolate while it is still warm. Allow to cool and enjoy!

Watermelon Rice Krispie Treats

August 3rd is National Watermelon Day! Here is a fun watermelon treat perfect for summer. To make these watermelon rice krispie treats you will need: 

Ingredients: 
(Green Layer)
-green food coloring
- 2 cups of rice krispies cereal
-25 large marshmallows
-1 1/2 tbs of butter
(red layer) 
-red food coloring
-2 1/2 cup of rice krispies cereal 
2 tbs butter 

-mini chocolate chips 
-Popsicle stick (optional)

Directions: 
First spray a round cake pan with cooking spray or grease with butter. 

Next in a sauce pan on medium heat make the green layer by melting the butter and 25 marshmallows. Once melted pour into a bowl and add 1-2 drops of green food coloring. mix well and then mix in the rice krispies cereal. Blend well and pour into the cake pan and spread around  the rim of the pan leaving the center empty(creating a green rim). Repeat this same step to create the red layer of rice krispies. Pour the red layer into the center of the cake pan and spread.

Allow to cool and once cool place the mini chocolate chips on the red layer to be the "seeds".Then cut into slices and if you wish insert a Popsicle stick. 

Enjoy!
