Banana Split Cupcake
Who doesn't love a delicious Banana Split Sundae in the summer? 🍨 July is National Ice Cream Month and I decided to make some tasty Banana Split inspired cupcakes! Yum!

To make the banana cupcakes you will need: 

Ingredients:
-1 1/2 cups of flour
-3/4 cup of sugar
-1 tsp of baking powder
-1/2 tsp of baking soda
-1/2 cup of melted butter
-4 mashed bananas
-2 eggs
-1/2 ts of vanilla extract

Topping:
-pink frosting
-white frosting
-Chocolate Ganache(or chocolate frosting)
-rainbow sprinkles
-Maraschino cherries

Directions:
Combine all of the dry ingredients first in a bowl for your banana cupcakes and mix well. Then add your wet ingredients and combine. Place into cupcake liners and bake at 350 degrees for 25 minutes. 

Once the cupcakes are cool the fun part is decorating! I placed vanilla and pink frosting into individual piping bags(cut the tips) and then placed both into a larger piping bag to create a swirl of the two colors to mimic vanilla and strawberry ice cream. You can also use sandwich bags. 

Top with either a Chocolate Ganache or just simply melt chocolate frosting slightly to be your fudge of the banana split cupcake. Then sprinkle with some rainbow sprinkles and lastly top with a cherry!

Melt-Proof Ice Cream:Cheesecake Ice Cream Cones

Cheesecake Ice Cream Cones
Say whaaatt? Melt-proof ice cream? July is National Ice Cream Month so I wanted to make a unique ice cream inspired treat. This recipe is for very delicious Cheesecake Ice Cream Cones! It is so easy and won't melt like regular ice cream.This is a cute idea for parties and you can get very creative by flavoring the cream cheese filling and decorating the cones. 

Ingredients:
-8 oz of softened cream cheese
-1 conatiner of thawed Cool Whip
-1/2 tsp of vanilla extract
-1/2 cup of powdered sugar
-food coloring(I used pink)
-sugar cones
-maraschino cherries
-sprinkles

Directions:
In a bowl blend the cream cheese with half of the container of Cool Whip(reserve the rest), vanilla and powdered sugar. Then mix in a few drops of food coloring. I decided to use pink so that it looks like strawberry "ice cream." Then place the cheesecake filling in a piping bag or you can use a sandwich bag and just cut off the tip. Pipe the cheesecake filling into the sugar cone. Then pipe the Cool Whip that you saved as the whipped cream topping. Lastly decorate with sprinkles and top with a cherry.

Ice Cream Cone Cupcake

July is National ice cream month! Yayy! I love ice cream (especially soft serve). Here is an interesting twist to my favorite summertime dessert! Ice Cream Cone Cupcakes! 

Ingredients:
-flat bottom ice cream cones
-1 box of cake mix
-eggs,vegetable oil and water needed for cake mix(follow instructions on back of box)
-1 container of white frosting
-sprinkles
-marashino cherries

Directions: 
-Preheat the oven to 350 degrees
-Follow the instructions on the back of your cake mix box. I used chocolate cake but you can use whatever flavor you want. 
-Pour the cake batter into the cones about 2/3 full. 
-Place on a cookie sheet or muffin pan. 
-Bake for about 20 minutes. 
-Once cool, frost and top with sprinkles and a cherry.
