Pumpkin Spice Latte Donuts

It is finally fall which means it is pumpkin spice latte season! HELLO! There is nothing I love more than sipping on a warm pumpkin spice latte on a cool Autumn afternoon. Well I decided to make a tasty treat to accompany my latte. Here is a recipe for SUPER EASY Pumpkin Spice Latte Donuts! I mean like ridiculously easy. 

Ingredients:
-1 box of yellow cake mix
-1-(15 oz) can of pumpkin puree
-2 tbs of instant coffee
-2 tsp of pumpkin pie spice

(you will also need a donut pan)

Glaze:
-2 cups of powdered sugar
-1/4 cup of milk
- 1 tsp of vanilla extract

Directions:
In a bowl mix the cake mix, pumpkin, coffee and pumpkin pie spice.
Preheat the oven to 350 degrees and grease your donut pan with cooking spray. .
Pour the batter into a large ziploc bag and cut the tip (this makes pouring into the pan so much easier).
Then begin squeezing the batter into the donut pan. Bake for about 12-15 minutes.
Once the donuts have cooled you can then dip into the glaze.
To make the glaze mix the powdered sugar, milk and vanilla. If you want it thick (like how I did mine) add more powdered sugar.

Insane Pumpkin Spice Milkshake

Are you a pumpkin spice lover? If so, this milkshake recipe is for you! I am obsessed with pumpkin spice and I was inspired by Black Tap's over the top milkshakes that I had to make my own pumpkin spice version. 

Ingredients:
-2 cups of vanilla ice cream
-2/3 cup of milk
-1/2 cup of canned pumpkin 
-1/4 tsp of pumpkin pie seasoning
-pumpkin spice sweets 
-vanilla frosting
-crumbled graham crackers 
-caramel syrup 
-whip cream

Directions;
Blend the ice cream, milk, pumpkin and spice in the blender and set to the side. 
Take your milkshake glass and pour some caramel to the inside around the sides. 
Spread some vanilla frosting to the rim of the glass and sprinkle graham cracker crumbs. 
Then pour the pumpkin spice milkshake mixture into the glass. 
Top with whip cream.
With a skewer assemble some of your favorite pumpkin spice treats and insert into the glass. I had a pumpkin spice Swiss Roll, cookies and homemade pumpkin spice latte donuts.

Pumpkin Spice BagelsĀ

Anyone that knows me knows that I am a pumpkin spice fanatic! I love to indulge in a warm pumpkin spice latte and I look forward to it every  fall.  Now I can enjoy it with a delicious homemade pumpkin spice bagel. Trust me when I say it isn't a daunting task to make your own bagels. 

Ingredients:
-2/3 cup of water
-1/2 cup of canned pumpkin
-1/3 cup of brown sugar
-1 tsp of salt
- 1 1/2 tsp of ground cinnamon
-3/4 tsp of ground nutmeg
-1/2 tsp of allspice
-3 cups of bread flour
-1 package of active dry yeast


Directions:
-Dissolve your dry yeast according to directions.
-In a bowl, add water, pumpkin, brown sugar, salt, spices, flour and lastly yeast. Blend  and knead the dough well  and add flour as needed. Then let it rise for about 10 minutes. 
-Bring a pot of water to a boil. 
- Then take a small handful of dough (add flour as needed) and roll into a ball and gently press your thumb through the center to form a ring. Make sure the ring of dough is even on all sides. 
-Once you have made your bagels drop into the boiling water for about 45 seconds on each side(only boil about 2 bagels at a time). 
-Lastly, coat a baking sheet with cooking spray and place bagels on the sheet and bake at 400 degrees for 15 -20 minutes. 
-Enjoy with some store bought or homemade pumpkin spice cream cheese!

Pumpkin Pie Parfait

Pumpkin Pie Parfait

A no bake simple treat perfect for Fall! 

Ingredients: 

8oz of cream cheese (softened)

¼ cup of heavy whipping cream

1 cup powdered sugar

½ small can of pumpkin

½ tsp pumpkin spice

2 containers of cool whip

1 box of graham crackers

Directions:

Make sure cream cheese is soft.  You can  put it in the microwave for a few seconds. Whip the cream cheese until it is nice and fluffy, add the heavy whipping cream, powdered sugar, pumpkin, pumpkin pie spice and one container of cool whip. Whip together really nicely. This will be the pumpkin layer for the parfait. 

Take the graham crackers and put in a large Ziploc bag and begin crumbling the crackers. The graham crackers will serve as the bottom layer of the parfait and some will also be sprinkled on top. 

Grab some cups or glasses of your choosing and you will now begin making the parfaits. 

Place a layer of the crumbled graham crackers on the bottom. Next add a layer of the pumpkin mixture. Then grab the other container of cool whip and add a layer of  cool whip. Add another layer of pumpkin, then another of cool whip and top with a sprinkle of graham crackers. 


Place in the fridge for an 1 hour or 2 to chill. 

Now enjoy! It is so yummy!
