July is National ice cream month! Yayy! I love ice cream (especially soft serve). Here is an interesting twist to my favorite summertime dessert! Ice Cream Cone Cupcakes!
Ingredients: -flat bottom ice cream cones -1 box of cake mix -eggs,vegetable oil and water needed for cake mix(follow instructions on back of box) -1 container of white frosting -sprinkles -marashino cherries Directions: -Preheat the oven to 350 degrees -Follow the instructions on the back of your cake mix box. I used chocolate cake but you can use whatever flavor you want. -Pour the cake batter into the cones about 2/3 full. -Place on a cookie sheet or muffin pan. -Bake for about 20 minutes. -Once cool, frost and top with sprinkles and a cherry. Enjoy!

With BBQ season upon us and Father's Day around the corner, I had to make these super awesome Hamburger Cupcakes. It is so simple to make and are just adorable!!
You will need: -Box of yellow cake mix - Box of Devil's food cake mix - 2 containers of white frosting -red, yellow and green food coloring -sesame seeds Directions: Follow the directions on the back of the cake mix box. Make both yellow and chocolate cupcakes. Once cool, cut the yellow cupcakes in half as these will be the hamburger buns. With the chocolate cupcakes cut off the top and this will be the hamburger patty. Divide the frosting into 3 separate bowls. With the food coloring, make 1 bowl yellow (cheese), 1 bowl green (lettuce) and the last bowl red(Ketchup). Then take each frosting color and put into a sandwich bag or you can use piping bag. For the yellow and green make a medium size slit at the end of the sandwich bag and for the red make a small slit. Place the chocolate cupcake that you cut as the Hamburger Patty on top of the bottom half of the yellow cupcake. First you will need to do the cheese. Pipe the yellow frosting into a square shape onto the "hamburger patty". Next with the green frosting do the lettuce by piping a star like shape. Lastly with the red frosting pipe a zig zag pattern as the ketchup. Top the hamburger patty with the top of the yellow cupcake. In a small cup combine some warm water with a little bit of sugar. Brush on the top of the yellow cupcake(hamburger bun) the sugar mixture and sprinkle the sesame seeds. This final detail really makes it look like a hamburger. Perfect treat for the summer! Enjoy! These are chocolate cupcakes with a marshmallow frosting. I used small candy canes as cup handles and mini marshmallows on top. Chocolate Cupcake recipe (I found this recipe on allrecipes.com) Ingredients: 1 1/3 cup of all-purpose flour 1/4 tsp baking soda 2 tsp baking powder 3/4 cup of unsweetened cocoa powder 1/8 tsp of salt 3 tbs of butter, softened 1 1/2 cups of sugar 2 eggs 3/4 tsp of vanilla extract 1 cup of milk Directions: Preheat the oven to 350 degrees. Mix flour, baking powder,baking soda, cocoa and salt. In another bowl cream together butter and sugar. Add eggs, stir in vanilla. Combine flour mixture a little add a time and add milk. Fill muffin pan cups 3/4 full. Bake for 15-17 minutes. Marshmallow Frosting Recipe Ingredients: 1/2 cup of butter(room temperature) 1 7oz jar of marshmallow fluff 1 cup of powdered sugar 1 tsp of vanilla Directions: Beat butter and sugar until fluffy. Mix in fluff and vanilla. Once cupcakes are cool frost with the marshmallow frosting and add a few mini marshmallows and a candy cane handle. |
