Anyone that knows me knows that I am a pumpkin spice fanatic! I love to indulge in a warm pumpkin spice latte and I look forward to it every fall. Now I can enjoy it with a delicious homemade pumpkin spice bagel. Trust me when I say it isn't a daunting task to make your own bagels.
Ingredients: -2/3 cup of water -1/2 cup of canned pumpkin -1/3 cup of brown sugar -1 tsp of salt - 1 1/2 tsp of ground cinnamon -3/4 tsp of ground nutmeg -1/2 tsp of allspice -3 cups of bread flour -1 package of active dry yeast Directions: -Dissolve your dry yeast according to directions. -In a bowl, add water, pumpkin, brown sugar, salt, spices, flour and lastly yeast. Blend and knead the dough well and add flour as needed. Then let it rise for about 10 minutes. -Bring a pot of water to a boil. - Then take a small handful of dough (add flour as needed) and roll into a ball and gently press your thumb through the center to form a ring. Make sure the ring of dough is even on all sides. -Once you have made your bagels drop into the boiling water for about 45 seconds on each side(only boil about 2 bagels at a time). -Lastly, coat a baking sheet with cooking spray and place bagels on the sheet and bake at 400 degrees for 15 -20 minutes. -Enjoy with some store bought or homemade pumpkin spice cream cheese!

I made a heart shaped egg sandwich. I cooked some eggs first (flat like an omelette) then I used the heart shaped cookie cutter to cut into a heart shape. Then I got some bread and cut it into a heart as well and toasted it on the same frying pan I used for the eggs. You can add some cheese and bacon if you want as well. You can even do some heart shaped pancakes. Pair it with some fruit and a big glass of OJ and mom will enjoy a delicious breakfast this Mother's Day. So I have been totally obsessing and drooling over the latest bagel trend. The Bagel Store located in Brooklyn is known for it's Rainbow Bagels among other interesting varieties. People are literally lining up to try these colorful eye catching Rainbow Bagels. I decided to make theses bagels myself and surprisingly it wasn't difficult. These bagels are tasty and so fun. Your kids will love them!

In a bowl add 1 cup of warm water to the yeast and mix in the sugar. Let it sit for about 10 minutes until it foams and bubbles. Then add flour, oil, salt and the remaining water. Mix and knead and let it rise in a greased bowl for 60 minutes in a warm area. Preheat the oven to 450 degrees. Also, bring a pot of water to a boil. Take the dough and divide it up. Add food coloring to each divided piece of dough. Knead the food coloring in(I decided to wear gloves to not get food coloring on my hands). I used red, yellow, green and blue. Next, roll out each dough ball and then stack the dough in rainbow order (red, yellow, green,blue). Then cut out into strips and twist. Then pinch the ends together to make into a circle like a bagel. Next you need to boil the bagels for just 30 seconds each. This allows the bagels to have a crunchy outside and soft inside. Place on a cooling rack and allow to dry then bake the bagels on a parchment lined cooking sheet for 15 minutes, Once cool, spread with cream cheese and even add some sprinkles if you like. Enjoy! |
