I have to be honest I have NEVER tried Butternut Squash Soup. So I was really excited to try this recipe and it is incredibly delicious!! The Power Pressure Cooker XL made it even more simple to make. Butternut Squash Soup Ingredients: 2lb butternut squash, peeled, cubed and seeded 4 cups of chicken stock 1 cup of apple cider or juice 1 large onion, chopped 2 cloves of garlic chopped 1 cinnamon stick 1 bay leaf 1/2 tsp nutmeg 3 tbsp olive oil 1 tsp of salt 1/2 tsp black pepper 1/4 cup of sour cream 1/4 cup toasted pumpkin seeds to garnish (optional) Directions: Place the inner pot into the Power Pressure Cooker XL. Press the CHICKEN/MEAT button.10 min. Combine garlic and onion into the inner pot. Cook for 2 minutes. Add butternut squash. Add remaining ingredients excluding sour cream. Secure the lid on the cooker.Lock the lid and switch the Pressure Release Valve to Closed Press the SOUP/STEW button to set time for 10 minutes. Once the timer reached 0, the Pressure Cooker will automatically switch to KEEP WARM. Press CANCEL. Let the pressure release naturally.Switch the Pressure Release Valve to Open. When the stream is completely release, remove the lid. Let cool. Remove cinnamon stick and bay leaf. Combine with sour cream in a blender until pureed. I am excited to share my review on the Power Pressure Cooker XL! This pressure cooker is awesome and cooks 70% faster than conventional cooking! The first recipe I tried is a Creamy Turkey Mac and Cheese: Ingredients: -6 oz of cream cheese -1 lb of elbow pasta dry -1 cup of water -2 cups of heavy cream -2 cups of shredded cheddar cheese -1 cup of Parmesan -2 cups of chopped turkey Directions: -Place the inner pot into the Power Pressure Cooker XL -Press the SOUP/STEW button to set for 10 minutes -Combine ingredients into inner pot -Secure lid on the cooker. Lock the lid and switch the pressure release valve to Closed -Once the timer reaches o, the pressure cooker will automatically switch to KEEP WARM. press CANCEL. Switch the pressure release valve to Open. When the steam is completely release, remove the lid. -Serve and enjoy! I garnished with a little bit of parsley. You will need: -Reese's Peanut Butter Cups -Candy Corn -icing or melting chocolate -fudge/chocolate covered cookies. Place chocolate/fudge covered cookie upside down. Next I melted some orange melting chocolate but you can also use frosting. Place a dollop on the top of the Reese's cup and then place the cup upside down in the center of the cookie. Next draw a rim around the Reese's cup. Lastly cut a piece of candy corn (I cut the yellow end) and place on the Pilgrim hat as the buckle. |
