I love to enjoy a juicy slice of watermelon on a hot summer day. With National Watermelon Day coming up on August 3rd,I think it's only appropriate to celebrate with this refreshing beverage. Strawberry Watermelon Slushie!
-2 cups of ice cubes
-2 cups of frozen seedless cubed watermelon
-2 cups of strawberries sliced
-a squeeze of lemon juice
-1/3 cup of sugar
Blend ingredients in the blender and enjoy!
It is officially SHARK WEEK!! If you love sharks then you will love this easy Shark Fin cupcake idea!
You will need:
-blue food coloring
-black melting chocolate
-white melting chocolate
-Make some cupcakes. Any flavor you like. Take your white frosting and dye some of it with blue food coloring(leave some of the white frosting to the side).
-When the cupcakes are cool frost with the blue frosting.
-Melt a 50/50 portion of the white and black melting chocolate in a microwave safe bowl at 30 second intervals(follow instructions on the package).
-Take the gray melted chocolate mixture and pour into a pipette bag and cut off the tip.
-On wax paper make a fin shape and then place in the freezer for a few minutes to harden.
-Place the fin in the center of the cupcake. With a butter knife, spread some of the white frosting to the bottom of the fin to create waves.
If you are a coffee lover like me, then you will love this easy frozen treat. I love a refreshing iced coffee on a hot summer day and this recipe for Mocha iced Coffee Popsicles is so good!
-International delight mocha iced coffee (I chose the fewer calorie version)
-1/2 cup of heavy cream
Milk chocolate drizzle:
-1 cup of dark chocolate chips
-2 tbs of coconut oil
and of course Popsicle molds
-Stir the iced coffee and heavy cream in a bow (a measuring cup works well). Then pour into your Popsicle molds. If you would like to use actual Popsicles (instead of what comes with the molds) insert after it has been in the freezer for an hour.
-freeze for at least 4-5 hours or overnight.
-Melt the chocolate with coconut oil together in a microwave safe bowl. Microwave at 30 second intervals and mix well.
-Remove the Popsicles from the molds. Let the Popsicle sit out of the freezer to thaw slightly or run molds under hot water to allow you to remove Popsicle easily.
-As a final touch drizzle chocolate over the Popsicle.
July is National ice cream month! Yayy! I love ice cream (especially soft serve). Here is an interesting twist to my favorite summertime dessert! Ice Cream Cone Cupcakes!
-flat bottom ice cream cones
-1 box of cake mix
-eggs,vegetable oil and water needed for cake mix(follow instructions on back of box)
-1 container of white frosting
-Preheat the oven to 350 degrees
-Follow the instructions on the back of your cake mix box. I used chocolate cake but you can use whatever flavor you want.
-Pour the cake batter into the cones about 2/3 full.
-Place on a cookie sheet or muffin pan.
-Bake for about 20 minutes.
-Once cool, frost and top with sprinkles and a cherry.
