This refreshing smoothie will really hit the spot for your Cinco De Mayo festivities!
Ingredients: -1 1/2 cups of chopped frozen pineapple -1 cup of chopped frozen mango -1/2 can of unsweetened coconut milk -1 small 6 oz can of pineapple juice -5 oz cup of coconut Greek yogurt - 2 tbs of honey -1 cup of ice -Whipped cream and cherry (optional) Directions: Add all of the ingredients above in a blender(I added the ice last). Blend until smooth. I topped with whipped cream and a cherry. Enjoy!

Happy Cinco De Mayo! Who doesn't love tacos? How about some yummy cookie tacos! This is a fun recipe idea to do with kids.
Ingredients: -Golden Oreos (taco shell) -White melting chocolate -Chocolate frosting -Crumbled chocolate oreos (ground beef) -shredded coconut (lettuce) -green food coloring -white frosting (sour cream) -Hot Tamales Candy (tomatoes) Directions: 1.) Separate a golden oreo and scrape off the cream. Then cut one of the cookie halves in half with a serrated knife. Melt your melting chocolate and put in a sandwich bag and cut off the tip. Fold the cookie into a taco shape and "glue" with the chocolate. Allow to dry. I took a cupcake pan and flipped it upside down and place the tacos in between the grooves to hold it's shape. 2.) Take your chocolate frosting and pipe(using a sandwich bag) into the center of the taco. Then top with the crumbled chocolate oreos (this is your ground beef). 3.) Using 1 or 2 drops of green food coloring dye your shredded coconut for the lettuce. Then top onto the taco. 4.) Pipe a squiggly line pattern of the white frosting on top of the taco for the sour cream. 5.) Lastly, cut off the ends of the red Hot Tamales candy(the round part)and place on the taco for the tomatoes. Happy Cinco De Mayo!Enjoy! |
