January is National Sunday Supper month and I decided to travel back int time to the 70's to try some retro recipes. ☮ I was introduced to a cookbook published in 1977 at my job and was inspired to give some the of the recipes a whirl. I have only tried Fondue once before and I really loved it. This was a very popular recipe in the 70's. It is actually quite simple to make at home. Ingredients: -1 1/2 tbs of butter -1 tbs of cornstarch -1/2 tsp of salt -1 cup of milk -1 cup of shredded cheddar cheese -1 cup of shredded swiss Directions: In a sauce pan melt the butter and then add in the cornstarch and salt. Mix until combined and then add the milk. Once the mixtures comes to a boil then add in your cheese. Stir continuously until the cheese has melted. You can dip meat, bread, veggies etc.. To make this Frozen Banana Salad dessert I used a vintage mold that I found at the thrift store. I found this recipe to be very delicious and refreshing. It would make for a great summer time treat! You will need: -2 ripe bananas -2/4 cup of sugar -1 can of crushed pineapples -2 tbs of lemon juice -2 tbs of maraschino cherries -1 cup of sour cream -Mash the bananas and combine all of the ingredients. Place in a mold and freeze in the freezer to set. This recipe for Salmon Mousse was just so bizarre that I just had to try it. I purchased a vintage salmon mold for this one. Ingredients:
-2 envelopes of gelatin -1 1/2 cups of cold water -1 cup of mayo -1 cup of sour cream -1 can of salmon(flaked) -1 small cucumber chopped -1 tbs of lemon juice -Paprika, salt and pepper to taste Directions: Soften the gelatin in the water and stir over low heat to dissolve and allow to cool. In a bowl combine the mayo, sour cream and stir in the gelatin. Chill in the fridge for just a few minutes to firm slightly. Mix in the salmon, cucumber, lemon juice and seasoning. Spray the salmon mold with non-stick cooking spray and pour in mixture. Chill in the fridge until firm. I suggest overnight.
