Happy Mardi Gras!!!!! Here is a simple cocktail to wash down all the King cake you will be eating.
-5 ounces of vanilla vodka
- 6 oz of pineapple juice
-2 ounces of lime juice-
-lime slices for garnish
-purple, green and yellow sugar crystals for rim
- In a cocktail shaker mix the juices and vodka with ice.
-Garnish the rim of your cocktail glass by dipping in water and then into a bowl of the sugar crystals.
-top it off with a few slices of lime.
I like to think that I am not that bad of a cook(my husband may differ). I know how to follow instructions and I like to try new recipes. I have never tried any meal delivery services before, I have been a bit skeptical thinking it might be too daunting or call for unique ingredients that my palate may not be accustomed to.
I tried HelloFresh which delivers weekly recipes and fresh ingredients straight to your doorstep!
My shipment included 3 meals for two. A steak, chicken and pork meal.
I decided to make the "when steak met potatoes and creamed kale with peppercorn sauce" meal first. It came with steak, potatoes, shallot, kale, peppercorn, beef broth and sour cream.
There is a recipe card that comes with each meal along with of course the fresh ingredients. When I say fresh I really do mean fresh. The kale was the most beautiful kale I have ever seen. The recipe card has a beautiful picture of the meal and step by step instructions and photos for each step on the back. This meal took about 30 minutes to make and I am not much of a steak eater and this steak was savory and delish! The kale in the peppercorn sauce was AMAZING!

This a simple and festive Valentine's Day dessert idea that I just love!
-white pudding mix
-2 cups of milk
-red or pink food coloring (I used pink)
In a bowl whisk together the pudding mix and milk. Then add a few drops of pink food coloring and mix well. Pour into desired serving glass and let it chill in the fridge until firm.
Then top with some whipped cream and sprinkles.
Hot chocolate is the best cure to a cold winter day! It is very simple to make homemade hot chocolate and I decided to "Emojify" my hot chocolate by adding emoji meringues!
-2 cups of milk
-4 tbs of unsweetened cocoa powder
-4 tbs of sugar
-1 tsp of vanilla extract
-1 pinch of salt
-In a sauce pan over medium heat pour in the milk. Wisk in the cocoa and stir well.
-Then add the sugar, vanilla and salt.
-Once mixed well remove from stove top and pour into mugs. Enjoy with marshmallows or whipped cream!
Meringues are a nice light treat and I decided to have fun and make Emoji meringues! I was inspired by my favorite youtuber Ro of "Nerdy Nummies". I followed her recipe for the "Poo " emoji merigngues. You can find that recipe here.
For the smiley emojis I used the following recipe;
-3 tsp of meringue powder
-1/2 cup of sugar
-1/4 cup of water
-1/2 tsp of vanilla extract
-yellow food coloring
-Preheat the oven to 350 degrees.
-Beat the meringue powder, half of the sugar and water for a few minutes. Then gradually beat in the rest of the sugar, vanilla extract and a few drops of yellow food coloring. Make sure meringue mxture is stiff and forms peaks.
- Line a cookie sheet with pachment paper.
-Place about a tbs of the meringue mixture on the parchment paper and smooth out into a circular cookie shape.
-Bake for 10 minutes. Then turn off the oven and let the meringues sit in the oven for an hour.
-Once cool, decorate with royal icing.
I decided to make Latkes(potato pancakes) for the first time. My Jewish friends said this a very traditional dish served for Hanukkah and easy to make. You can enjoy it with some sour cream or apple sauce.
I wanted to also make something very festive and came across this cute Driedal Treat idea. It is just marmallows with a pretzel stick on top and nutella and a hershey kiss at the bottm. Then hebrew letters drawn with frosting gel.
I LOVE Eggnog!! If you love eggnog just as much as I do then you will love this easy eggnog milkshake recipe.
-1 cup of eggnog
-1 cup of vanilla ice cream
- 6 Ginger Snap cookies
Blend the ice cream, eggnog and cookies. Pour into a glass and top with whip cream. To make it INSANE I garnished the rim with frosting and crushed ginger snap cookies. I also added an eggnog cake roll and homemade eggnog donuts.
I had to make donuts using my absolute favorite holiday beverage, EGGNOG!!!
-1 cup of flour
-1/3 cup of sugar
-3/4 tsp of baking powder
-1/4 tsp of ground cinnamon
-pinch of nutmeg
-1/4 tsp of salt
-1/2 cup of eggnog
-2 tbs of vegetable oil
-1/2 tsp of vanilla extract
-3 tbs of eggnog
-2 tbs of water
-1 1/2 cups of powdered sugar
Prheat the oven to 425 degrees and lightly grease your donut pan.
In abowl, whisk the flour, sugar, baking powder, cinnamon, nutmeg and salt. Then add the eggnog, egg, vegetable oil and vanilla until mixed well.
Put the batter in a large ziploc bag and cut the tip and fill the donut pan.
Bake for 6-7 minutes.
To make the the glaze , just simply whisk together the powdered sugar, eggnog and water.
Once cool dip into the eggnog glaze.
I was really fascinated by the Unicorn Poop cookies that I had to create a festive version with the Holidays approaching. So why not make Elf Poop Cookies? They taste like peppermint because an Elf's diet surely consists of candy canes! LOL
-1/2 cup of softened butter
-1/2 cup of shortening
-1/4 cup of cream cheese
-1/2 tsp of salt
-1 cup of sugar
-1/2 tsp of peppermint extract
-2 cups of flour
-red and green food coloring
-red glitter icing
In a bowl, combine the butter, shortening and cream cheese and beat well. Then add the sugar and salt.
Beat in the egg and peppermint until combined. Then gradually add the flour.
Divide the dough in half in two seperate bowls and add the food coloring( one red and the other green).
Wrap the red and green balls of dough individually with plastic wrap and place in the freezer for 20 minutes or in the fridge for an hour.
Set the oven to 375 degrees.
Remove the dough and place on some some wax paper on the counter(this way you don't need to use flour). Take a tbs size ball of the red dough and roll into a rope. Then do the same for the green dough. Then twist and coil the two together and place on a greased cookie sheet.
Bake for 8-10 minutes.
Once the cookies are cool I went ahead and put some red glitter icing and sprinkles on top.
Gingerbread Man cookies are my favorite Christmas cookie! I decided to make a GIANT version of this Christmas cookie classic.
This recipe yields about 3 Giant Gingerbread Man cookies. You can double the recipe to make more.
-3 1/2 cups of flour
-2 tsp of Gingerbread spice
-1/2 tsp of ground cloves
-1/2 tsp of baking soda
-Pinch of salt
-3/4 cup of molasses
-1 tsp of vanilla
-1 stick of softened butter
-1/4 cup of sugar
-1/2 cup of brown sugar
- 2 cups of confectioner's sugar
-1 egg white
-1/2 tsp of water
Gingerbread Man Cookie Cutout Template
-First mix your dry ingredients in a bowl. The flour, spices, baking soda, and salt.
-In another bowl beat your butter, sugar, molasses, egg and vanilla. Once mixed well slowly add in your flour mixture. Mix well until combined.
-Then take your dough and separate into two balls and wrap with plastic wrap.Set aside in the fridge to chill for 2 hours.
-Remove the dough from the fridge and roll between two pieces of parchment paper. Once the dough is flat place in the freezer for about 15 minutes,
-Then take the dough out of the freezer and cut out into Giant Gingerbread Man cookie shape. Then once it is cut out place on a cookie sheet and place in the freezer for 10 minutes.
-Remove from freezer and bake the cookie at 350 degrees for 7 minutes. Then remove from the oven and rotate and bake again for about 6 minutes. Set aside to cool for at least 20 minutes before decorating.
-Decorate with royal icing and candy!
