There is one thing that I always look forward to for Valentine's Day.........chocolate covered strawberries!!! So I decided to make a cupcake version of my favorite Valentine's Day treat. This is a chocolate cupcake with a strawberry cream cheese frosting and topped with a chocolate covered strawberry.
1 1/3 cups of flour
1/4 tsp of baking soda
2 tsp of baking powder
3/4 cup of cocoa powder
pinch of salt
3 tbs of softened butter
1 1/2 cups of sugar
3/4 tsp of vanilla extract
1 cup of milk
Preheat the oven to 350 degrees and line a muffin pan with cupcake cups.
In a bowl sift the flour, baking soda, baking powder, cocoa and salt.
In a large bowl cream the butter and sugar until fluffy. Add the eggs and beat well. Stir in the vanilla and add the flour mixture and milk. Mix well and fill the cups 3/4 full.
Bake for 15-17 minutes. It is done when you insert a toothpick and it comes out clean.
Let it cool before frosting.
Strawberry Cream Cheese Frosting
1./2 cup of strawberries
1 stick of butter
1 (8 oz) package of cream cheese
1/2 tsp of vanilla extract
4 cups of confectioners sugar
red food coloring
Pureed the strawberries.
In a bowl with an electric mixer beat the butter until fluffy. Add the cream cheese and beat until combined. Slowly stir in the sugar. Add the vanilla and just 3 tbs of strawberry puree. Once it is mixed well add a few drops of red food coloring to give it more of a pink color.
Frost the cupcakes and top with a chocolate covered strawberry.
My favorite chocolate cake is chocolate lava cake. If it is on the dessert menu I ALWAYS order it. Well this time I made it at home from scratch and it is AMAZING!!
1 (4 oz) package of Baker's semi-sweet chocolate
1/2 cup of butter
1 cup of powdered sugar
2 whole eggs
2 egg yolks
6 tbs of flour
Preheat the oven to 425 degrees.
Butter 4 custard cups and put on a cookie sheet and set aside.
In a bowl microwave the chocolate and butter for about 1 minute until it is melted. Stir in the sugar, add the eggs, and the flour. Mix well and evenly spoon into custard cups.
Bake for 13-14 minutes. You will know when it is done when the edges are firm and the center is soft. Let it cool for a minute and with a knife loosen the cake from the custard cup. Invert into a plate and enjoy with some ice cream or cool whip.
I recently got a slow cooker for Christmas so I love looking up some simple slow cooker recipes. Chili is the perfect slow cooker recipe for a cold winter day.
Slow Cooker Turkey Chili
1 tbs of vegetable oil
1 lb of ground turkey
2 cans of tomato soup
2 cans of kidney beans, drained
1 can of black beans, drained
1 medium onion chopped
2 tbs of chili powder
1 tsp of red pepper flakes
1/2 tbs of garlic powder
1/2 tbs of ground cumin
pinch of black pepper
pinch of salt
Over a skillet heat the vegetable oil and cook the ground turkey until it is fully cooked and evenly brown. In the slow cooker combine the turkey, tomato soup, beans, onion, and season with the chili powder, red pepper flakes, garlic, cumin and salt and pepper.
Stir and then cook on high for 4 hours.
When you are ready to serve, top with some green onion, cheese or sour cream. Enjoy!
French Onion Soup is my favorite soup to enjoy on a cold winter day. I often always order it anytime I visit a diner.It is also quite simple to make.
1 tbs of olive oil
2 tbs of butter
6 medium onions sliced
salt and pepper to taste
2 tsp of fresh thyme
6 cups of beef stock
4 thick slices of french bread toasted
Gruyere Cheese (I used mozzarella)
Heat a deep pot over medium high heat. Add the butter and oil into the pot. Then add the sliced onions and season with salt & pepper and thyme.Cook for 15 minutes until tender and caramel in color. Next add the 6 cups of beef stock and bring to a boil.
Preheat the boiler. On a cookie sheet arrange 4 small soup bowls. Pour onion soup into boils and then place a toasted french bread slice in each. Place cheese on top and put in oven until cheese melts.
I love red velvet! On a cold winter night this red velvet hot chocolate recipe really hits the spot.
-1 cup of milk
-1/2 cup of semi-sweet chocolate chips
-1 1/2 tsp of red food coloring
-1 tsp of vanilla
Pour the milk and chocolate chips in a ceramic mug/cup and place in the microwave for 2 minutes(stir after a minute). Then take out of the microwave and add the vanilla and food coloring. Mix well. Then top with cool whip and chocolate chips.
If you are looking for a healthy treat to curb your sweet tooth or for a quick snack for on the go, these will do the trick! It is also insanely simple to make.
Banana Oatmeal Raisin Bites
-2 large bananas mashed
-2 cups of oats
-1/2 cup of raisins
- 1 tsp of vanilla
Preheat the oven to 350 degrees.
Blend the oats till it reaches a flour like consistency. Add the oat flour mixture to the mashed bananas. Then add in the vanilla and raisins. Once mixed well line a sheet pan with parchment paper. Place tablespoon size drops of the mixture onto the baking sheet.
Bake for 10-12 minutes,

So I decided to give this detox a whirl to kick start a healthy and balanced diet.
-12 ounces of water
-4 tbsp apple cider vinegar
-1 tsp of cinnamon
-4 tbsp of lemon juice
-1 pinch of cayenne pepper
-4 tbsp of honey
Mix together and add some ice.
The verdict, it doesn't taste bad. I actually enjoyed it!
